Stuffed Zucchini

Stuffed Zucchini
 

Ingredients:

• 4 medium zucchinis, halved lengthwise and seeds scooped out

• 1/2 cup cooked quinoa

• 1/4 cup cherry tomatoes, halved

• 1/4 cup diced red bell pepper

• 1/4 cup diced red onion

• 1/4 cup Kalamata olives, sliced

• 1/4 cup feta cheese, crumbled

• 2 tablespoons olive oil

• Salt and pepper to taste

• Fresh parsley for garnish.

Instructions:

1. Preheat oven to 375°F (190°C).

2. combine cooked quinoa, cherry tomatoes, bell pepper, red onion, olives, and feta cheese in a bowl.

3. Drizzle olive oil over the quinoa mixture and season with salt and pepper.

4. Stuff zucchini halves with the quinoa mixture.

5. Place stuffed zucchinis on a baking sheet and bake for 20-25 minutes or until the zucchinis are tender.

6. Garnish with fresh parsley and serve.
