Mediterranean Breakfast Bowl
 

Ingredients:

• 1 cup cooked farro or bulgur

• 1/2 avocado, sliced

• 1/4 cup cherry tomatoes, halved

• 1/4 cup diced cucumber

• 1/4 cup Kalamata olives, sliced

• 1/4 cup feta cheese, crumbled

• 1 tablespoon olive oil

• Salt and pepper to taste

Instructions:

1. combine cooked farro or bulgur, avocado, cherry tomatoes, cucumber, olives, and feta cheese in a bowl.

2. Drizzle with olive oil and season with salt and pepper.

3. Toss gently and serve
