Spinach and Feta Omelet
Ingredients:
• 2 large eggs
• 1/4 cup milk
• Salt and pepper to taste
• 1/2 cup fresh spinach, chopped
• 1/4 cup feta cheese, crumbled
• 1 tablespoon olive oil
Instructions:
1. whisk together the eggs, milk, salt, and pepper in a bowl.
2. Heat olive oil in a non-stick skillet over medium heat.
3. Add spinach to the skillet and cook until wilted.
4. Pour the egg mixture over the spinach and cook until the edges start to set.
5. Sprinkle feta cheese on top.
6. Fold the omelet in half and cook until the eggs are fully set.
