Baked Cod
 

Ingredients:

• 4 cod fillets

• 1 cup cherry tomatoes, halved

• 1/2 cup Kalamata olives, sliced

• 1/4 cup red onion, thinly sliced

• 2 tablespoons olive oil • 1 tablespoon lemon juice

• 1 teaspoon dried oregano

• Salt and pepper to taste

• Fresh parsley for garnish

Instructions:

1. Preheat oven to 400°F (200°C).

2. Place cod fillets in a baking dish.

3. combine cherry tomatoes, olives, red onion, olive oil, lemon juice, oregano, salt, and pepper in a bowl.

4. Pour the tomato mixture over the cod fillets.

5. Bake for 20-25 minutes until the fish is cooked through and flakes easily with a fork.

6. Garnish with fresh parsley and serve.
